Abstract
The aimed of this study was determined the role of basil leaf extract (Ocinum sanctum L.) as an alternative to maintained beef quality. The parameters of this study were total bacterial colonies (TPC), pH and early of decay. The research design was Completely Randomized Design (CRD) with 5 treatments and 5 replications. The treatment groups applied were P0 (without treatment) as control, P1 (consentrations 5% basil leaf extract), P2 (consentrations 10% basil leaf extract), P3 (consentrations 15% basil leaf extract), and P4 (consentrations 20% basil leaf extract). Total bacterial colony (TPC), pH, and early of decay using statistical analysis Analisis of Variance(ANOVA). The results of the analysis of the total bacterial colony test (TPC) and the initial decay test showed a very significant difference between P0, P1, P2, P3, and P4 where P<0.05 basil leaf extract (Ocinum sanctum L.) has antibacterial activity by suppressing bacterial growth. The results of the pH test analysis showed that there was no significant difference between P0, P1, P2, P3, and P4 where P> 0.05. Keywords: Beef, Basil Leaf Extract
