Abstract

This research aimed to determine the extract of Galangal (Alpulina Galanga) on the pH value, Early Decay and Total Plate Count in Beef. Beef used as many as 25 samples. This type of research is experimental research. The design used is a complete random design with 5 treatments and 5 repetitions. The five treatments were, P0 control, P1 (50g beef + 5% galangal extract), P2 (50g beef + 10% galangal extract), P3 (50g beef + 15% galangal extract), P4 (50g beef + 20% galangal extract). Sample checking is done at 10 o'clock. Data were analyzed using ANOVA Test and descriptive analysis. From the results of data analysis for the parameters of the pH value found significantly different P0 with P2, P3 and P4 but not significantly different from P1. P1 is significantly different from P2 but not significantly different from P3 and P4. From the initial decay parameters, 5 tubes were obtained which showed a positive reaction, P0. While the results of the Total Plate Count treatment P1, P2, P3, and P4 have a significant difference to P0.This shows that galangal extract effectively slows the decay process and decreases microbial growth.
