Abstract
This study aimed to determined the quality of broiler chicken meat traded in traditional markets Dukuh Kupang Surabaya reviewed from organoleptic test and test of dead chicken meat without slaughtered by Warris method. This research was a descriptive research with sampling technique using simple random method. A total of 21 samples of broiler chicken meat was taken from 7 traders, of which each trader was taken 3 different chicken meat samples. Samples of broiler chicken were examined for organoleptic properties which include color, odor and consistency by 15 panelists and tested using Warris method using Malachite Green 0,1% and 12% H2O2. Samples of broiler chicken meat made extract with a ratio of 1: 1, then drop Malachite Green 0.1% and 12% H2O2. Positive results are indicated by a green solution and a negative result is indicated by a blue solution. The data obtained were analyzed descriptively and presented in tabular form. Of the 21 samples of broiler chicken examined, 19 samples showed a negative with blue solution in tube reaction, while 2 samples showed positive with green solution color. In the organoleptic test the results obtained, that broiler chicken meat studied had a color of meat between pale white to yellowish white, typical smell of fresh meat and had a rubbery and elastic consistency. The quality of broiler chicken meat in traditional market of Dukuh Kupang Surabaya was quite good which was indicated by the low positive of broiler chicken meat that died without slaughtered and good organoleptic value.
