Abstract

FORMALIN DETECTION AND ORGANOLEPTIC TEST ON MACKAREL TUNA (Euthynnus affinis) IN TRADITIONAL MARKET SIMO AND PABEAN OF SURABAYA Herlina Litvirda Yanti ABSTRACT This research aimed to detect formalin and quality of organoleptic test in fresh tuna sold in Simo and Pabean Surabaya market. This research was a descriptive study usinged 20 samples of fresh tuna fish. Formalin test used easy test method, while to see the quality of organoleptik fresh tuna include gill appearance, eye, aroma, texture. This organoleptic test was conducted through a panelist that has been determined by the number of 15 people to provide an assessment with a score that has been determined by the Indonesian National Standard 2729: 2013. The result of the research data was that tuna fish from all 20 positive samples contain formalin, while the organoleptic test data was processed based on Kruskal-Wallis non parametik statistic method. from the results of the study note that the average of organoleptic test on the Customs Market were gill sighting 4,405, eye 3,827, aroma 4,747, texture 3,481 while in Simo market its was gang sighting 4,199, eye 3,599, aroma 5,028, texture 3,974. The results showed that the quality of organoleptic quality in tuna was no real difference (P> 0.05), and tuna were also decreased quality because the average under 7 was not in accordance with Indonesian National Standard that has been determined.
