Abstract
this study aimed to determine the stability of smoked stingrays (dasyatis sp) in terms of from early decay, ph and total colony of bacteria. this study used completely randomized design (ral) with 3 treatments and 9 replications. the three treatments were p1 (stored at room temperature on day 1), p2 (stored at room temperature on day 2), and p3 (stored at room temperature on day 3). smoked stingray storage (dasyatis sp) were carried out for 24 hours at room temperature. data obtained from the beginning of early decay on p1, p2 and p3 indicate that a positive result was characterized by the formation of white clouds around the walls of the test tube. the mean value of ph shows p1 8.67, p2 9.2 and p3 9.4. total bacteria (tpc / total plate count) on p1, p2 and p3 yields> 3x106 cfu means that it had exceeded the maximum limit set by sni 5x105 cfu/gr so that smoked stingray (dasyatis sp) were not feasible for consumption. the results were analyzed descriptively. the conclusion of this study was that storage time at room temperature affected the beginning of early decay, ph and total colony of bacteria in smoked stingray (dasyatis sp).
