Abstract
This study aims to determine the level of formalin and quality of jambal salted fish (Arius thalassinus ruppel) in traditional markets of North Surabaya. A total of 30 samples of jambal salted fish were obtained from Bulak Fish Center (Fish Processing Center) of 15 samples and Traditional Market in Sukolilo Street by 15 samples. Sampling was done by purposive sampling technique. Of the 30 samples that have been obtained are examined using test kits and organoleptic tests that include color, aroma and texture. There are 12 samples of jambal salted fish containing positive formalin. The data obtained were analyzed using independent T-test. The test result shows the value (p> 0,05). The average value of formalin test with test kit at Bulak Fish Center value is 0,7900 ± 0,37934 and at Sukolilo market equal to 1,0400 ± 0,23417. In organoleptic test of market color of Bulak Fish Center has a value of 2.8667 ± 1.18723 and Sukolilo market has a value of 2.7333 ± 1.22280. Organoleptic test of aroma at Bulak Fish Center has a value of 2.5333 ± 0.74322 and Sukolilo market has a value of 2.4000 ± 1.05560. As well as on organoleptic test of market texture Bulak Fish Center has a value of 3.5333 ± 0.63994 and Sukolilo market 3,3333 ± 0.81650. The quality of salted jambal fish (Arius thalassinus ruppel) in Bulak Fish Center is better than the quality of salted jambal fish (Arius thalassinus ruppel) in Sukolilo market. This is because the content of salted fish formalin in the Sukolilo market is greater than that of Bulak Fish Center. Keywords: Formalin, Organoleptic Test, Jambal Salted Fish, North Surabaya
