Abstract

This study aimed to analyze the effect of soaking of quail meat (Coturnix coturnix japonica) in turmeric extract (Curcuma domestica Val.) To organoleptic quality, pH, and total plate count test. The meat used the chest of 24 quails. The design used was Completely Randomized Design with 4 treatments and 6 repetitions. The four treatments were P0 immersed in aquades as control, P1 soaked turmeric extract 1%, P2 soaked turmeric extract 3%, and P3 soaked turmeric extract 5%. Meat immersion was done for one hour at room temperature and then performed organoleptic test, pH, and Total Plate Count (TPC) test. Organoleptic test and pH test were then analyzed using Kruskall Wallis test while Total Plate Count (TPC) test were analyzed using ANNOVA test in SPSS for windows program. The mean color values of the meat according to the panelists sequentially of P0, P1, P2, and P3 are 6.16, 6.67, 12.33, 12.67 while the mean odor values are 6.33, 7.66, 12.16, and 15. The average pH value is 6.27 , 6.23, 6.25, 6.25. While the mean and standard deviation of total plate count test is 2.23 x 106 ± 39327.68, 1.93 x 106 ± 31885.21, 1.81 x 106 ± 36560.45 and 0.86 x 106 ± 33266.59. The results showed that meat immersion in turmeric extract had significant effect (P <0.05) on organoleptic test which consist of odor and color and total bacterial colony, but no significant effect (P> 0.05) on pH quail meat.
