Abstract

Penelitian ini bertujuan untuk mengetahui jumlah total cemaran bakteri dan derajat keasaman (pH) daging bebek di pasar kecamatan gurah kabupaten Kediri. Sampel yang diambil dari 4 pasar berbeda yaitu pasar Bangkok, Gurah, Turus, Wonojoyo masing masing 8 sampel daging bebek dari tiap pasar. Pemeriksaan derajat Keasaman dilakukan menggunakan pH meter pada daging bebek dari tiap pasar dengan jumlah 8 sampel. Hasil dari Uji Total Plate Count ditemukan daging bebek dengan tingkat cemaran mikroba yang melebihi batas maksimal cemaran bakteri dari sampel pasar Bangkok dengan nomor sampel 5 yaitu 4,6 x 106 cfu/gram, pasar Gurah nomor sampel 11 yaitu 1,3 x 106 cfu/gram, pasar Turus dengan nomor sampel 22 yaitu 2,5 x 106 cfu/gram, pasar Wonojoyo nomor sampel 26 yaitu 1,3 x 106 cfu/gram. Hasil pengukuran pH daging bebek ditemukan dengan nilai tertinggi dari pasar Bangkok sebesar pH 5,84, pasar Gurah pH 5,88, pasar Turus pH 5,90 terdiri dari 2 sampel yaitu sampel nomor 19 dan 24 serta pasar Wonojoyo pH 5,92. Total Plate Count (TPC) daging bebek pada pasar Kecamatan Gurah Kabupaten kediri terdapat cemaran bakteri yang melebihi ambang maksimum cemaran bakteri berdasarkan SNI 7388:2009 yaitu 1 x 106 cfu/gram This study aimed to determine the total of bacterial contamination and the degree of acidity (pH) of duck meat in the market sub-district of Gurah, Kediri district. Samples were taken from 4 different markets, namely Bangkok, Gurah, Turus, Wonojoyo markets, 8 samples of duck meat from each market. Examination of the degree of acidity was carried out using a pH meter on duck meat from each market with a total of 8 samples. The results of the Total Plate Count Test found duck meat with microbial contamination levels that exceeded the maximum limit of bacterial contamination from the Bangkok market sample with sample number 5 which is 4.6 x 106 cfu/gram, Gurah market sample number 11 which is 1 ,3 x 106 cfu/gram, Turus market with sample number 22 which is 2.5 x 106 cfu/gram, Wonojoyo market with sample number 26 which is 1.3 x 106 cfu/gram. The results of measuring the pH of duck meat were found with the highest value from the Bangkok market at pH 5.84, Gurah market pH 5.88, Turus market pH 5.90 consisting of 2 samples, namely samples number 19 and 24 and Wonojoyo market pH 5.92. Total Plate Count (TPC) of duck meat at the market in Gurah District, Kediri Regency, contains bacterial contamination that exceeds the maximum bacterial contamination threshold based on SNI 7388:2009, which is 1 x 106 cfu/gram
