Abstract

Abstrak Penelitian ini bertujuan untuk mengetahui pengaruh proporsi beras merah dan kacang hijau serta konsentrasi penambahan Carboxy Methyl Cellulose (CMC) terhadap kualitas minuman beras merah-kacang hijau. Parameter yang diamati meliputi parameter kimia (serat kasar, protein, air), parameter fisik (kestabilan emulsi, total padatan terlarut dan viskositas), organoleptik (warna, rasa dan aroma), rendemen dan analisis finansial. Materi penelitian ini terbuat dari bahan beras merah, kacang hijau kupas, Carboxy Methyl Cellulose (CMC), gula dan air. Metode yang digunakan pada penelitian dengan percobaan Rancangan Acak Kelompok (RAK) pola faktorial dengan 2 faktor dan 3 ulangan. Faktor pertama yaitu proporsi beras merah dan kacang hijau dengan 3 taraf yaitu M1=60:40%, M2=70:30% dan M3=80:20%. Faktor kedua yaitu konsentrasi Carboxy Methyl Cellulose (CMC) dengan 2 taraf yaitu D1=0,4% dan D2=0,5%. Data yang diperoleh dianalisis menggunakan analisis ragam, apabila terdapat berbeda nyata maka dilanjutkan dengan uji DMRT. Hasil penelitian menunjukkan bahwa minuman beras merah-kacang hijau dengan perlakuan proporsi beras merah dan kacang hijau serta konsentrasi penambahan Carboxy Methyl Cellulose (CMC) tidak berbeda nyata terhadap semua parameter, akan tetapi perlakuan proporsi beras merah dan kacang hijau berbeda nyata terhadap serat kasar. Perhitungan nilai harapan perlakuan terbaik pada M3D1 dengan nilai terbaik 6,27 dengan analisis kimia kadar serat kasar 0,66%, kadar protein 0,11%, kadar air 92,66%, kestabilan emulsi 8%, total padatan terlarut 7,33% Brix, viskositas 63,67 cP, warna 84,5 %, rasa 83,4% dan aroma 87,8 %. Perhitungan analisis finansial usaha minuman beras merah-kacang hijau layak untuk dikembangkan dengan parameter Break Event Point 25.365 botol, Net Present Value sebesar Rp 65.742.028,92, Internal Rate of Return 20,48%>18% dan Payback Periode tercapai setelah 4 tahun 16 hari. Abstract This research aims to discover the influence of the proportional glutinous rice and the additional concentration of Carboxy Methyl Cellulose (CMC) to the quality of the glutinous rice drink- green beans. Parameter that is observed are chemical parameter (crude fiber, protein, water), physical parameter (emulsion stability, total dissolved solids and viscosity), organoleptic (color, taste and flavor), rendement and financial analysis. The material of this research is made from glutinous rice ingredients, peeled green beans, Carboxy Methyl Cellulosa (CMC), sugar and water. The method that is used in this research is using the experiment of Rancangan Acak Kelompok (RAK) factorial pattern with 2 factors and 3 repetition. The first factor is the proportion of glutinous rice and green beans with 3 levels, those are M1=60:40%, M2=70:30%, and M3=80:20%. The second factor is the concentration of Carboxy Methyl Cellulosa (CMC) with 2 levels, those are D1=0.4% and D2=0.5%. The data is obtained using the various analysis, if there is a different then it is continued with the DMRT test. The result of this research shows that the glutinous rice drink- green beans with the proportion of the glutinous rice drink and green beans treatment and also the additional concentration of Carboxy Methyl Cellulose (CMC) are not significantly different from all parameters, but the treatment of the glutinous rice drink and green beans are exactly different from crude fiber. The calculation of the best treatment of expected value in M3D1 which is the best value 6.27 with the chemical analysis of 0.66% crude fiber content, 0.11% protein content, 92,66% water content, 8% the emulsion stability , 7.33% Brix total dissolved solids, 63.67 cP viscosity, 84,5% colors, 83.4% taste, 87.8 % flavor. The financial analysis calculation of the glutinous rice drink- green beans business is appropriate to be developed using the 25.365 bottle of Break Event Point parameter, Rp 65.742.028,92 of Net Present Value, 20,48%>18% of Internal Rate of Return and Payback Period after 4 years and 16 days.
